Lengthy Seashore Chef opens pizzeria with worldwide flavors, together with Cambodian
Former James Republic chef Maurice Yim has just taken over a long-time pizzeria in Moncton to turn the joint into an upcoming one Powwow pizza. They close on Thanksgiving and open on December 1st with a pizza menu that spans the entire international spectrum, including one inspired by Yim’s Cambodian background.
Yim will realize Powwow in a few weeks. When open, pizza flavors come from all over the menu, with options like mole instead of a tomato-based sauce, a Filipino-style pizza, or traditional cake. And alluding to his Cambodian heritage, Yim created one with lemongrass, turmeric, galangal, garlic, ginger, chicken, watercress, and mozzarella. Prices vary between $ 10 and $ 20 and all in a light pink pizza box. The choice of packaging is another nod to Southern California culture, as many Cambodian refugees opened donut shops across LA upon their arrival in the 1970s and 1980s, where pink crates were predominant.
And because Bixby Knolls is quickly becoming a hub for new restaurants and breweries, Yim will partner with both. Bixby Knolls has the Liberation Brewing Company and the soon-to-be-opened Ambitious Ales, which is why locals nicknamed the neighborhood “Brewery Knolls”. Yim created the Ambitious Pizza, in which he will incorporate used grains from the brewing process into his pizza dough and the sauce with Ambitious Ales’ beer. Ambitious customers can also order a pizza while drinking a local beer.
Yim has a long history in Moncton. As a former head chef at James Republic, Yim used a modern take on Cambodian cuisine with global flavors. He also keeps the former Bella Pizza employees updated under the agreement with the former owner. Powwow will make good use of the 1,200 square meters with terrace. The opening times are from 11 a.m. to 9 p.m.
